Chex and Slow Cooked Italian Beef

Scott Stevens, the author of Every Silver Lining has a Cloud, gave me the secret to his favourite food. I never liked Chex that much, but his variation on it sounds like great party nibbles.

Take is way Scott, tell us how to transform that common thing into something NOM!

Homemade Chex mix is a favorite.chex

I know you can buy it already bagged, but I make a custom batch at home for the kids. Extra cheesy, extra cashews, not as many wheat Chex. My personal batch has Tobasco, peanuts, extra garlic rye chips and not as many pretzels.

His favourite dish is Italian Beef, and I just had to have the recipe, because I luvs things I can put on the stove and just ‘forget’ about it. šŸ™‚

You need just five ingredients plus good hoagie buns and provolone and a day to let it cook.

3lb beef roast, any cut

14 oz can low sodium beef broth

Two packets Good Seasons Italian dressing mix (reg. Or zesty, I get the zesty one.)

Jar of pepperoncini peppers, remove stems but do not drain

Jar of giardiniera, drain out the oil and rinse (hot or mild, I prefer the mild)

Put it all in a slow cooker on low, 8-12 hours.
